Why This Vegetarian Burrito Bowl Recipe Is Awesome

I’m always on the lookout for new and interesting recipes that fit my busy life. So, when I came across burrito bowls, I was intrigued. They seemed like a fast way to get healthy meal prep done for the week. I’m glad I gave them a try because I realized how cheap and delicious they are as well. Burrito bowls are now my new favorite meal prep lunch recipe.

The ingredients used in these vegan burrito bowls are simple and healthy, making them the perfect option for a quick and nutritious meal. Beans and rice are both excellent sources of protein, while the mixture of veggies provides essential vitamins and minerals. Also, this recipe has all the main food groups, so you can add it to your list of Meatless Monday recipes!

This recipe is also great for eating healthy on a budget. Rice and beans are inexpensive, and most of the veggies can be replaced with either frozen or canned options. This means you can stock up on your ingredients when they’re on sale and buy in bulk to save some cash. Now, let me show you how easy this recipe is!

Recipe: Vegan Burrito Bowls

Ingredients:

  • 1/4 cup corn
  • 1/4 cup black beans
  • 1/4 cup diced tomatoes
  • 1/2 cup rice
  • 1/4 cup sliced bell peppers (any color)
  • 1/3 cup shredded lettuce
  • 2 Tbsp. salsa verde

Burrito Bowl Instructions

The instructions for making these burrito bowls are pretty simple. Once you have your veggies chopped and rice and beans cooked, all you need to do is throw them in a bowl together. Then, top with the salsa verde and enjoy.

You can eat your burrito bowl immediately or heat it up later in the microwave. I recommend meal prepping them so you have easy lunches to grab for a few days. Lastly, you can keep your vegan burrito bowls sealed in the fridge for up to a week.

Vegan Burrito Bowl Substitutions

You don’t need a meat substitution to make a delicious black bean burrito bowl. However, if you’re looking to add a bit more protein to your bowl, I recommend some meat-free “chicken” strips. My favorite for the vegan burrito bowls are the Gardein Crispy Fingers: they have a zesty flavor that’s perfect for this dish.

Also, burrito bowls are a great way to get rid of the extra veggies you have in your fridge. Don’t be afraid to put your own twist on this recipe by adding leftover veggies, fake meats, or even tofu. You can add whatever you have on hand or even switch up the rice for quinoa or farro. Try topping it with some vegan cheese for a bit of extra flavor.
